I got into linux when the desktop got pretty gsolid, and I generally try to figure out how to do things using the user interface because I think that more users will be able to follow along. Are you using DVI cables or VGA? I'd try to use DVI if possible, as I think they carry more than just the video signal, they have info about the monitor so Ubuntu can determine what it's possible to do. If you plug in your smaller monitor and boot up, can you go into nvidia settings and change it to the 1650 x 1050? And if so, when you plug in the big monitor and reboot, what happens?
